I already have an HTPC running SageTV and am thinking of adding an HD Theater unit to extend this to the Wife's sewing room.

The issue is she has an LCD monitor/TV unit there right now, which has composite, component and DVI inputs, but no HDMI input - both the composite and component inputs are already in use.

I am thinking that I could hook up the HD Theater via an HDMI cable and an HDMI to DVI adapter dongle (or just get an HDMI to DVI cable). If I do this, can I bring the audio across separately from the stereo RCA jacks?

Yeah, should work just fine.

I am using a HDMI to DVI dongle to drive my Plasma. No issues video wise (as far as the dongle is concerned) you can check out this thread (http://forums.sagetv.com/forums/showthread.php?t=40415&highlight=drive+plasma) that details some issues I had initially with my plasma vs. an LCD monitor.

As for audio I am using the optical digital out.
