Some do. Sage is capable of setting wake timers so the system will automatically power on for recordings. I don't have any personal experience with it though so I can't make any positive or negative recommendations.

I've got two of my SageTV servers set to sleep now. Win7 x64 Ultimate never tried with with WinXP. So far works great. Got wakeup time in SageTV set to 5 minutes on one server. It requires more time to initialize then my other one. It is the oldest server. The wiz.bin goes back to 2004 so that may be why it takes longer. It also has the most videos and imported files on my unRAID server as well. Which is the most likely cause for the extended startup. Since my WHS SageTV server is always on I coded some menu entries in SageTV to send WOL to the sleeping servers. I do this because my extenders are HD200s so no WOL capabilities. That also works well so far only had that for a week now.

So... I'm running Sage on a dedicated Win7x32 with only HD200s connected. Would I need to 'code some menu entries' for the HD200s to wake up the server?

Its not a big deal really since I idle at 40w and serve tv at 50w, but every little bit helps and since I'm running to 24x7 servers, I thought I should sleep this one since it is only used around 8 hours per day at the most. Thanks.

The HD200s (at least the current firmware) does not support wake on lan (WOL). It is possible that it might be added but I have not seen/read any indication that it will. In my case I have multiple SageTV servers. My WHS server is ALWAYS on so I can connect to it first and then send the WOL signal from the WHS server to another server currently sleeping to wake it up. If you only have one server then you would have to modify the HD200s standalone mode code to send the WOL signal. I have seen posts that talk about being able to code modifications for standalone mode but I cannot do that - sorry. If as I am assuming you also have multiple SageTV servers then I could send you the JAVA code I found on the internet (and my modifications) as well as the Studio code. It has hard coded mac addresses of my SageTV servers that I wake. Just let me know.
