something you MIGHT be able to try, is to go into your sagetv/server folder, and edit the file .SAGE_CUR_VERSION and make it an empty file. That might 'match' with the empty value it's getting from the version lookup, and proceed without trying to update.

Sweet, that worked.
Also added the issue to github https://github.com/stuckless/sagetv-dockers/issues/7 Guess I'm back to limping along until the cable's fixed. Fiber is great, until your ONT goes tango uniform, and then you've got nothing. At least I've got an antenna, and LTE for backup. At least I'm not totally back to the 1800's.
