While Win7 would be plenty stable it isn't as good for a server as an OS designed for server...

I did it with just LM Remote KeyMap. I haven't set it back up again (just started using Sage again) so I don't remember all the details but you can program a key to open an application.

I would try to get it all on one machine. If you want raid5 get a decent hardware controller like a Perc 5i/6i. You can start out with just 3 HDDs, then add more later on when you need more space....
