Random Service Crashes

I recently had to basically gut my server and when I got it back up and running I am now getting service crashes every day or so. I have re-installed, and even upgraded to 6.1.3 release candidate but continue to get these crashes. I really do not want to run without service since every UI hang ends up costing you whatever is being recorded at the time. Does anyone have any suggestions?

Turn on debug logging and see if there are any clues in there.

Did that after the last crash, but it may be a few days before it crashes again. I also uninstalled Sage and Java and reinstalled both. At one time I remember that older versions of Java worked better than the newer versions. Is that still true? It looks like I might have unintentionally installed some of the Java updates. When I reinstalled Sage I used only what was in the install package.

If you're in the US you'll want an up-to-date Java for the Daylight Savings fix. A lot of folks are using Java 6 (aka 1.6) with good results.
