Conversions
I see the menu option for running conversions, but how do I set up something to convert?

Oh - you mean you see the "Video Conversions" item in the Media Center menu, right?

Select a recording or imported video, then choose "Advanced Options" to see additonal options, including "Convert". With Advanced Options turned on, you can also use "Convert All ..." after selecting a group of videos.

Thank you. Is there a way to make a new format to convert to? Specifally, I want to encode to a 500kpbs WMV file for use on a PMP device.

I think EvilPenguin has a utility to use the converter of your choice. I cant find it currently but remember seeing it. check out the customization area.
