SageTV controls the tuner(s) on your main/server machine & you can watch TV there. SageTVClient is used on a network machine to watch TV on that machine, along with controlling which shows get recorded, etc. SageRecorder can be used on the network machine so that SageTV can use the tuner(s) on that machine, if any, to add them to the pool of available tuners.

Someone else may clarify, but I don't believe 2 350s will work in one machine -- there isn't much point to that anyway as the advantage of the 350 over the 250 is simply that it has a TV out via a hardware decoder. Normally, multiple 250s can be on the same machine, along with 1 350 -- BUT mixing your 250s w/a 350 seems to work for some people but not others. (Perhaps some sort of conflict with the motherboard & drivers?) You can pretty much add the cards your machine will hold, and then some... if you have USB2 ports, you can start adding the Hauppauge PVR-USB2, which works just as well as a 250 but is easier to install, at a higher cost though.
