3.5 drive in 5.25 bay and HD migration

I want to undertake a little project on my HTPC. Currently it has two 200GB sata drives in raid0. What I plan to do is get a small ATA drive and two large ATA drives. The small ATA drive will be for the OS and the larger ones for more SageTV storage space.

So first question, to mount the new drives I'll need a way of putting a 3.5 drive in a 5.25 bay. I've seen products like this but I was wonding if anyone had good/bad experiences with a particular model.

Second I'll need to migrate the contents of my current drives over to my new drives. My current partitions are a 30 GB OS and about 350 GB storage. First, how would I move the OS over to anther drive? I'm assuming a simple disk copy won't work ... or will it?

Other than that I think this will be pretty straight forward. Just copying the second partition to the new large drives and setting the new drives to use the drive letter of the current large storage set D:, or am I overlooking somthing?
