Recording Quality and Interlaced Video Files

I am new to SageTV and am trying to break old habits. I record tv at "DVD Standard Play". I don't always use STV to view the recorded files. But, the video files appear to be interlaced, pixelated and jerky when I view them with anything but STV. The only way I can view a recorded file on, say, Windows Media Player or Quicktime, is to convert the file first to either an "iPod" or "MPEG4-Deinterlaced" format.
What am I doing wrong?!
