Possible to get SageTV to handle my library more like Plex?

I used Sage for awhile about 18 months ago. At the time the HD media extender was just too buggy for my taste, so I sold my HTPC and extender. In the last year I have switched over to Mac (love it btw). I have an iMac, an NVIDIA Mac Mini, and a 4TB unRAID server for media. I am currently running Plex on my Mini and loving it so much. I have a lot of Movies (some m2ts Blu-ray rips) and TV shows that are sorted and named well enough that I have only had to make some manual adjustments here and there to get all the metadata pulled from IMBD and theTVDB properly. I am thrilled with the user interface and experience.

I bought an HDHomeRun for OTA and maybe cable in the future. I am currently playing with the trial version of SageTV on my iMac. Live TV is great. The interface looks basically identical to what I remember from the PC version. I have three TVs I want to be able to access all of my content, recordings, and Live TV from. I planned on buying at least one HD200, having my Mini on another, and the 3rd TV will either be connected to my iMac somehow or another HD200. I'm going to run the SageTV backend on the Mini since it is dedicated to home theater.

I was wondering if I would be better off trying to use SageTV and Plex both on the Mini and just using my Bluetooth keyboard with Quicksilver commands setup to easily switch between Plex and SageTV (and the new Hulu desktop app) or if Sage has some plugins or customizations available to separate my content a little better. I've seen the metadata add-on, but I want to be able to keep my TV and Movies separate and have a better experience browsing the content than what is the experience with vanilla SageTV. The other question I need answered is if the interface for my existing content on the HD200 will be the same as what I am seeing in Sage (TV and movies muddled together). And can the HD200 interface be customized like some of what I have seen available for the Sage software?

Sorry for the long post. Thanks for any help I can get! I am looking to eliminate my Dish Network VIP622 receiver that is currently serving all three TVs in the house. I will either just stick with OTA and online content or add cable at some point down the line.
