VOB Question

I am in the process of beginning my dvd ripping collection to an unraid server. I have ripped about 10 dvd's into VOB folder structure using DVDfab but from what I am reading it sound like Makemkv would be better. I have not done anything with the VOB fodlers yet but I wonder if I should start ripping uncompressed mkv. Is VOB/ISO just a folder format and is mkv the file format?

ISO is a disk image. It can be anything, it is not audio/video specific.

VOB is just a container for mpeg video and audio (various formats). I believe it has a 1 gb file limit, which is why you see multiple files.

MKV is also just a container. However it can be huge, and can contain almost any combination of video and audio formats.

Just rip to the DVD structure with the .ifo's and the vob's. That's what Sage supported first, it's easier to import and play and you don't need another program (vcd) to mount the ISO. It's also easier to rip to that with DVDFab because it is the default. And it's easier to rip it all or rip just the main movie.
